Here in Maine, moose hunting is strictly regulated to maintain the population. Every year a lottery is held in which hopeful hunters enter in the hopes of being drawn for a coveted permit.

Over the years, my family has been fortunate enough to win the lottery and hunt successfully, providing us with a steady supply of meat.

We prefer to process our game meat ourselves, therefore customizing packages for our family’s needs.

When processing our moose, we grind a large amount of it. Not only do we make packages of plain hamburger, but we also make sausage by adding pork fat and seasonings. A staple in our home is the Old Plantation variety.
